Panna cotta is dead simple. It’s just hot milk, sugar, and gelatin. I like it with fresh strawberries or a little fruit compote. It’s sort of a poor man’s creme brulee.

I am always amazed at how people have such a negative reaction to rabbit. I think it’s quite tasty braised or fricasseed. They should call it “lapin” or something so people won’t know what it is, the way that goat is called “cabri” in swanky restaurants.
